The December meeting of the Experimental Cuisine Collective will take place on Monday, December 10, from 4 to 6 p.m. at La Boîte à Epices, 724 11th Avenue (at 51st Street), in NYC (please note the different location!). 

In this session, La Boîte founder and owner Lior Lev Sercarz will talk about his work with spices, from sourcing to blending the finest of spices from around the world. He will also discuss agricultural and legislative issues that affect the flavor of spices. He and food photographer Thomas Schauer will also give us a preview of Lior's book The Art of Blending, ahead of its official release the next day.   
Lior Lev Sercarz was raised in Israel and trained as a chef in France, where he was introduced to the fine art of spice blending by Olivier Roellinger. He moved to New York in 2002 to cook for Daniel Boulud, and left the restaurant kitchen in 2006 to work with spices full time. He has since created blends for some of the world's best chefs under the label La Boîte à Epices. In 2011, he opened a Manhattan store and art gallery, where he blends and sells his spices and a line of sweet-savory biscuits. He is the author of The Art of Blending: Stories & Recipes from La Boîte's Spice Journey, published in December 2012.

A "science and cuisine" contest

Bonjour à tous,

L'édition 2013 du concours Sciences et Cuisine est lancée (cf mail de lancement ci-dessous).
Nous souhaitons par ce nouveau mail nous assurer que vous avez eu l'information, étant donné les changements de communication qui se sont opérés pour Sciences et Cuisine en cette fin d'année.

Comme l'an dernier, vous pouvez vous inscrire à titre individuel ou en équipes. Trois catégories de candidats sont de nouveaux proposées : Professionnels (métiers de bouche, industriels...), éducation (classes ou groupes de travail et leur professeur), et amateurs. Pour mémoire, des équipes "mixtes", avaient été formées en 2012 (restauration  / recherche par exemple).
L'échange entre les différents acteurs de la chaine alimentaire a été très riche l'an dernier et nous espérons qu'il le sera tout autant et même plus, cette année.

Nous vous invitons à vous inscrire sur notre site internet www.sciences-cuisine.fr, si vous souhaitez participer au concours, ou à nous contacter pour plus d'informations.

All of us at the Experimental Cuisine Collective hope that you were not too personally affected by last week's hurricane. Please let us know if you are organizing relief events and/or need volunteers---we'll post information on our website. 
  
Our November ECC meeting will take place on Monday, November 19, from 4 to 6 p.m. in the Chemistry Department at NYU, room 1003 (31 Washington Place, between Washington Square Park and Greene Street). You will need a photo ID to enter the building.    

In this session, Francisco Migoya will be officially presenting The Elements of Dessert, his latest, just released cookbook. He will discuss his motivation for writing this book, the process itself, the book's content, design, and format, and go through recipes that are particularly necessary to dissect and discuss. To understand these principles through practice, we will conclude by sampling some of the chocolates featured in the book!

Francisco J. Migoya is an associate professor at the Culinary Institute of America, in Hyde Park, New York. He is the author of Frozen DessertsThe Modern Café, nominated for a James Beard Award, and The Elements of Dessert. He was named one of the Top Ten Pastry Chefs in America in 2011 by Dessert Professional. Before the CIA, Francisco was the executive pastry chef for The French Laundry, Bouchon Bakery, and Bouchon Bistro.

Dear Friends,
I am happy to tell you that next week (November 15), at 7.00 PM, the chef Mickael Foubert, his team and some of his colleagues from the Toques Blanches Internationales will serve note by note dishes during a public event, where this new cuisine will be explained.
A short presentation will be discussed with the cooking team, then hotel customers will be able to move from table to table in order to taste note by note bouchées.

I am writing because, for here in America the term Gourmetología, is this sometimes substituting the Molecular gastronomy.

I asked if it is a new philosophy or if you are introducing changes in the concepts...Although guided me for the etymology of the word if treated the gourmet taste
 
 
 
And here is my answer : 
some people play the name game, which means that they do strange things, inventing new names for things that have already one ("modernist cuisine" ;-) for example ).

No, there is no change :
1. Molecular gastronomy is a scientific activity called molecular gastronomy
2. molecular cuisine is cuisine with new tools, ingredients, methods
3. Note by note cuisine is cuisine using pure compounds instead of complex mixtures called vegetables, fruits, meats or fishs

A seminar in NYC

As a reminder, we are hosting a special panel at the Monell Chemical Senses Center in Philadelphia this Monday, September 10 at 3 p.m. Details at eccmonell.eventbrite.com . Our regular ECC meeting will take place on Monday, September 17 from 4 to 6 p.m. in the Chemistry Department at NYU, room 1003 (31 Washington Place, between Washington Square Park and Greene Street). You will need a photo ID to enter the building.    

Dan Felder, head of the Momofuku Culinary Lab,  will talk about microbes, miso, and the Lab. In this lecture, he will explore the culinary origin and scientific processes inherent to traditional fermentations. He will also examine how the study and understanding of these fermented staples of traditional cuisine serve as a catalyst for innovation, and allow him and his team the opportunity to make products that are  delicious, unique, and meaningful. Additionally, he will speak about the role of science in the Momofuku kitchen, both conceptually and practically, and what they have learned as a result of this process.

Durante 3 jornadas intensivas desde el viernes 19 de octubre al domingo 21 de octubre del 2012, desarrollaremos los temas claves de introducción a la Gastronomía Molecular buscando la  “explicación científica de los fenómenos y transformaciones culinarios” (Nicholas Kurti y Hervé This 1988).

El curso será teórico práctico permitiendo a los participantes experimentar cada uno de los temas mediante la participación activa (manos a la obra).

Before we gather back in New York, however, we are happy to announce a special ECC event: On Monday, September 10, the Experimental Cuisine Collective will go on the road to the Monell Chemical Senses Center in Philadelphia. There, Monell scientists will take part in a panel moderated by ECC co-founder Kent Kirshenbaum, on the topic of Salt, Fat, and Sweet Taste---and Diet.
  
The panel will start at 3 p.m. and run until 4:30 p.m. Please RSVP by clicking here or the link below, and meet directly at Monell, which is a short walk from Philadelphia's 30th Street Station, at 3500 Market Street.

From our US colleagues

Hello all,
 
After our May break, we are back for the final session of the Experimental Cuisine Collective's 5th year---yes, it's already been that long! The ECC's June meeting will take place on Wednesday, June 20, from 4 to 6 p.m. in the Chemistry Department at NYU, room 1003 (31 Washington Place, between Washington Square Park and Greene Street). You will need a photo ID to enter the building.
  
In his talk, "Bev-O-Metrics: Spinning the Bottle to Profile Drinks," Subha Das, assistant professor of chemistry at Carnegie Mellon University, will show how chemistry and food collide in his research by discussing the flavor profiles of liquids, from morning java to cooling afternoon soda to crisp evening wine. Spectral data such as nuclear magnetic resonance offers a window into the profile of these drinks. The presentation will examine how these profiles relate to genomics and metabolomics and how these complex profiles can be determined and used under real world conditions for education and enjoyment. And to deliciously put theory to practice---if time allows---we will conclude with taste tests.

I receive a letter

Here is an email that I got and the answer that I made :


1. The email :
Hello Dr. This,
 I am currently a 22 year old career student, and my background is in Chemical Engineering. I fear that I have had difficulty finding a passion in a lot of areas of research in Chemical Engineering, and am seeking a new direction in my life.

I've come across your name in articles on Molecular Gastronomy, and have become a big fan of your journal publications. I am particularly interested in the way you have developed a scientific nomenclature to describe the chemistry of food, and admire your passion for bringing food science to a modern standard.

I was wondering if you had any recommendations for research programs that a young student could pursue in this field. Or things that I could do to make myself more desirable for said programs. I feel that my background in Chemical Engineering gives me a unique perspective from the fundamentals of heat and mass transfer, thermodynamics, and kinetics.

2. The answer :
Thanks, but please be rather fan of yourself, making everything to be worth having a fan. Indeed, you put a lot of pressur on me... because I shall merit your trust.
By the way, do you know that there is a good thing to make if you want to get ennemies, i.e. giving advices ? If the friends follow it and it fails, the are angry at you. And if it works, they are frustrated not to have decided by themselves (an idea probably from Oscar Wilde ; to be checked).

More seriously, I am very happy that you recognized that Molecular Gastronomy is clearly a scientific activity.

Concerning "research programs", I have thousands of questions, and we study here a very small number of them. Indeed, collecting "culinary precisions" and testing them can lead to scientific results... if you apply the right method of science. Your background is fine. Just play on !

Séminaire NYC


The April  meeting of the Experimental Cuisine Collective will take place on Monday, April 23, from 6 to 8 p.m. at LightHouse restaurant in Brooklyn: 145 Borinquen Place (corner of Keap). To get there by subway, take the L train to Lorimer or J, M, Z train to Marcy. This meeting is part of the 2012 Umami Food & Art Festival, with our thanks to festival director Yael Raviv and Naama Tamir, owner of Lighthouse.   
  
In their presentation, "Elemental: Shaping our Process for Culinary Evolution," Robert Truitt (executive pastry chef of Altamarea Group) and Brian Sullivan (Ai Fiori) will walk the audience through their creative process by examining design-related theory, cognitive understanding as it pertains to the culinary world, and the influence on the creative process that business occasionally supersedes. Attendees will not only get a visual sense for some of their past works, but also a demonstration incorporating some of the processes and theories that guide their work.

The next meeting will take place the 23th of April

Beware: our next meeting, for the Group for the study of culinary precisions (formerly Seminar on Molecular Gastronomy) will not take place the 16th of April, but rather the 23 !
From 4.00 to 6.00 PM, as usual.

We shall study the filtering of flour, for genoise, pancakes, béchamel sauces, choux pastry.

What can the advisor "ask" to students?

In a friend email, I could say that he was discussing the issue of how much an advisor should ask to students ?

Here is my proposed answer :
Indeed the sentence about advisors asking too much is very interesting.
Advisors ? They advise. The individuals are fully responsible for their work. It took me years to understand that, but now it's clear for me... as many of my young friends could tell you.

Then the advisors should not ask much or little. He/she should not ask anything.
Either students do well, and they stay in an active group, or they don't do enough, and they depart, because they would spoil the high spirit of the team.

Let us also remember that life is difficult for some of us: low money, jobs outside, poor (intellectually) family, health problems... The advisor, in my idea, is there to be a friend, just like referees: friendly people asking questions to make others be sure of what they do.

And to finish : the summum of intelligence is kindness and rightness

La Escuela Platense de Arte Culinario invita al taller teórico-prático de:

¨ESFERIFICACIONES (directas, inversas y alcohólicas).Principios teóricos y utilidad de cada una de las técnicas y de los reactivos que se utilizan.
Taller práctico que incluirá todas las técnicas de esferificaciones.

Geles: Estructura básica de los geles. Tipos de sustancias que forman geles. Geles calientes y geles fríos. Iniciación a la técnica de esferificación. Principios teóricos de las distintas técnicas de esferificación. Diferentes métodos y recetas para cada método: esferificaciones directas e inversas. Esferificaciones alcohólicas.
